Create hollow chocolate shapes that resemble real fresh fruit. Then fill with fillings of sorbert, ganache or ice cream for that special accent to finish off any plated dessert, cupcake or cake.
This mold is manufactured from food grade polycarbonate material, regarded as the best in the world for chocolate or hard candy. The highly polished surface helps your chocolate achieve a glossy finish. These molds will last a lifetime, the polycarbonate material is virtually unbreakable, mold will not warp or flex.
Directions for use :
- Coat each cavity with red cocoa butter
- Assemble the mold together and fill with white pure or compound chocolate
- turn the mold upside down and allow the excess chocolate to drain back into your melting pot
- allow the white chocolate to set
- fill each cavity with the filling of your choice, such as ganache, fondant flavoured fillings, ice cream or sorbets
- cap off your fruit top with chocolate to seal in your filling
- prepare the appropriate stem and leaf of each fruit using modeling paste or marzipan
- attach to your fruit with chocolate and you now have a finished three dimensional fruit
